π Strawberry Cheesecake Bites Recipe No Bake
Place the pan in the freezer for about 30 minutes so the crust is set. While the crust is freezing, in a medium bowl, or stand mixer, add the cream cheese, powdered sugar, and vanilla. Mix together until it is fully combined. Pour/spread filling over the crust and return to the freezer for 30-45 minutes.
STEP FIVE: Line a baking sheet with parchment paper or wax paper. Set it aside. STEP SIX: Using a 1-tablespoon cookie scoop, scoop the cheesecake mix. Roll into a ball and set the cheesecake bites on the prepared baking sheet. Repeat the steps for the rest of the bites.
Heat Treat: Microwave the dry cake mix in two 30-second intervals, stirring between each interval. Cool completely before mixing into the cream cheese. Make The Cheesecake Mixture: Beat the cream cheese until smooth. Add the dry cake mix and mix until incorporated.
Add in the lemon juice, sugar, honey, cinnamon, and salt. Stir the mixture together then turn the stove on to medium heat. Cook and stir the berry mixture until the berries soften, about 6 minutes. Stir in the remaining 1/2 cup of reserved strawberries. Whisk together the cornstarch and water until dissolved.
Tap the pan on a hard surface to bring any air bubbles to the surface and pop them. Bake on the lowest rack of your oven for 20 to 25 minutes. The filling should be slightly wobbly in the centre (see note 5). Turn the oven off, open the door slightly and and leave the cheesecakes to cool down for 30 minutes.
Cheesecake. Melt the chocolate in a bowl over a pan of simmering water, or in the microwave on short bursts until full melted. Leave to cool whilst doing the rest. In your stand mixer with the whisk attachment, whisk together the cream cheese, icing sugar and vanilla together until smooth.
This recipe works best with a full-fat cream cheese. Butter- 6 ounces, softened to room temperature. That is ΒΎ of a cup or one and a half sticks. Unsalted butter is preferred. Using an electric mixer, mix the softened cream cheese, vanilla extract, and sugar together until well blended. Add strawberries, lemon juice, mixing further until well blended. Add whipped cream and gently fold into the cream cheese mixture. Cover with plastic wrap and freeze for 3-4 hours or until set.
Pour remaining strawberry whipped cream mixture over cream cheese mixture. Add remaining 4 ounces of sugar cookies and 4 ounces of strawberry wafer to food processor and pulse until coursely chopped. Sprinkle chopped cookies over top of dessert. Refrigerate for at least 6 hours or freeze for 1 hour.
In a medium sized bowl, stir together cookie crumbs, granulated sugar and melted butter until combined. Press cookie mixture into the bottoms of each cupcake wrapper. Refrigerate until set. In a large bowl, cream the cream cheese and sugar together. Mix in the strawberries and vanilla until well combined.
Chill in the freezer for at least 30 minutes. In a large mixing bowl, beat together cream cheese and 1 cup granulated sugar with a hand-held mixer until smooth and creamy. Set aside. In a separate bowl, whisk together strawberry jello and boiling water until dissolved. Set aside.
In a large mixing bowl beat together the cream cheese and powdered sugar. Add whipped cream and smashed strawberries to the cream cheese mixture and mix until combined. Spoon cream cheese filling onto the prepared crust. Smooth top with a spatula, and refrigerate until firm (about 4 hours).
